Description

Dragon eyes, also called longans, are small, round tropical fruits a little larger than grapes. You could try substituting lychees if you can't get dragon eyes.

Ingredients
  • 1 ¼ cups brown sugar
  • ¾ cup butter, softened
  • 2 eggs
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • ⅓ cup peeled, seeded, and minced dragon eyes
Directions
  1. 1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 muffin tins or line with paper liners.
  2. 2. Mix brown sugar and butter together in a bowl until creamy. Add eggs, one at a time, beating well after each one.
  3. 3. Combine flour, baking powder, and salt in a bowl.
  4. 4. Stir flour mixture, milk, and dragon eyes into the sugar mixture. Spoon batter into the prepared muffin tins.
  5. 5. Bake in preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes.
