Description
Dragon eyes, also called longans, are small, round tropical fruits a little larger than grapes. You could try substituting lychees if you can't get dragon eyes.
Ingredients
- 1 ¼ cups brown sugar
- ¾ cup butter, softened
- 2 eggs
- 2 ¼ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup milk
- ⅓ cup peeled, seeded, and minced dragon eyes
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 muffin tins or line with paper liners.
- 2. Mix brown sugar and butter together in a bowl until creamy. Add eggs, one at a time, beating well after each one.
- 3. Combine flour, baking powder, and salt in a bowl.
- 4. Stir flour mixture, milk, and dragon eyes into the sugar mixture. Spoon batter into the prepared muffin tins.
- 5. Bake in preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes.
