Chicken, Avocado, and Bacon Lettuce Wrap

Description
This recipe uses rotisserie chicken to create an easy and delicious bacon lettuce wrap including avocado.
Ingredients
- 2 slices bacon
- ⅓ cup shredded rotisserie chicken
- coarse salt and ground black pepper to taste
- 1 avocado
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tomato, chopped
- 1 onion, chopped
- 2 lettuce leaves, or as needed
Directions
- 1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet.
- 2. Add chicken to skillet and stir to coat with bacon drippings. Season with salt and pepper.
- 3. Mash avocado in a bowl and season with lemon juice, garlic, salt, and pepper. Add tomato and onion to taste.
- 4. Divide cooked bacon, chicken, and avocado spread between lettuce leaves and wrap up.
