Italian Pork Loin Roast with Vegetables

Description
This is a quick and easy recipe for anyone to make. The meat is moist and delicious, and the homemade Italian dressing provides a wonderful flavor and adds moisture to the pork loin roast and vegetables.
Ingredients
- 1 (2 pound) boneless pork loin roast
- 1 ½ teaspoons sea salt
- 1 teaspoon seasoned salt
- ¼ teaspoon ground black pepper
- 1 pound carrots - peeled, halved lengthwise, and sliced
- 2 stalks celery, cut into chunks
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- ½ onion, cut into chunks
- ⅔ cup extra-virgin olive oil
- ¼ cup apple cider vinegar
- 1 ½ teaspoons dried oregano
- 1 teaspoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon dried thyme
- ¼ teaspoon dried basil
- ¼ teaspoon dried parsley
- ¼ teaspoon dry mustard
- ⅛ teaspoon celery seed
Directions
- 1. Place pork into the bottom of a slow cooker and sprinkle with sea salt, seasoned salt, and pepper. Add carrots to the cooker around the roast followed by celery, bell peppers, and onion.
- 2. Combine oil, vinegar, oregano, honey, garlic powder, onion powder, thyme, basil, parsley, mustard, and celery seed in a small bowl using a whisk. Pour dressing over roast and vegetables.
- 3. Cover and cook until meat is no longer pink in the center and vegetables are moist and tender, 6 to 7 hours.
