Description

Delicious! Use ripe mangoes for best results.

Ingredients
  • 1 (9 inch) pie crust, baked
  • 2 cups pureed mango
  • 1 tablespoon fresh lime juice
  • ¼ cup evaporated milk
  • ¼ cup sifted all-purpose flour
  • ¾ cup white sugar
  • ½ teaspoon ground cinnamon
  • 2 eggs, beaten
Directions
  1. 1. Preheat oven to 350 degrees F (175 degrees C).
  2. 2. In a large bowl mix together mango puree, lime juice, and evaporated milk. In a separate bowl thoroughly mix flour, sugar, and cinnamon.
  3. 3. Gently stir flour mixture into mango mixture. Whisk until smooth, then mix in beaten eggs. Pour mixture into pastry shell.
  4. 4. Bake in preheated oven for 30 minutes. Chill before serving.
