Ingredients
- ⅓ cup apple cider vinegar
- 3 tablespoons lime juice
- 4 chipotle peppers in adobo sauce
- 4 teaspoons minced garlic
- 4 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- ½ teaspoon ground cloves
- 1 (4 pound) chuck roast
- ¾ cup chicken broth
- 3 bay leaves
Directions
- 1. Combine vinegar, lime juice, chipotle peppers, garlic, cumin, oregano, black pepper, salt, and cloves in a blender or food processor. Blend the sauce well.
- 2. Place meat in a slow cooker and pour sauce on top. Add broth and bay leaves. Cover and cook on High for 4 to 6 hours without removing the lid.
