Tequila Lime Salad

Description
This wonderful lettuce salad has a kick. Serve with chicken on top for an entree, or use it as a great side one its own.
Ingredients
- 1 head romaine lettuce, chopped
- 4 green onions, sliced
- 2 roma (plum) tomatoes, chopped
- 1 avocado - peeled, pitted, and diced
- 1 tablespoon fresh lime juice
- ¼ cup apple cider vinegar
- 2 tablespoons tequila
- 1 tablespoon chilled lime juice
- salt and ground black pepper to taste
- ¼ cup extra-virgin olive oil
Directions
- 1. Place the lettuce, onions, tomato, avocado, and 1 tablespoon lime juice in a large bowl; toss to coat.
- 2. Whisk together the vinegar, tequila, 1 tablespoon lime juice, salt, and pepper in a small bowl; slowly stream in the olive oil while whisking; pour the mixture over the salad and toss to coat. Serve immediately.
