Description

Green tomatoes, scallions, instant potato flakes, cream, Chardonnay, and spices combine for a delicious soup you can garnish with crumbled bacon and sour cream.

Ingredients
  • 1 cup water, divided
  • 1 bunch green onions (scallions), cut into pieces
  • 2 tablespoons extra-virgin olive oil
  • 4 ½ pounds green tomatoes, diced
  • 1 tablespoon chicken soup base
  • 2 teaspoons salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated garlic
  • ½ cup Chardonnay wine
  • 1 pint light whipping cream
  • 1 cup instant mashed potatoes (such as Idahoan® Buttery Homestyle®)
Directions
  1. 1. Combine 1/4 cup water and green onions in a blender; blend on the "Grate" setting.
  2. 2. Heat olive oil in 5-quart stockpot over medium heat. Pour in green onions. Cook and stir until fragrant, about 1 minute.
  3. 3. Combine 1/4 cup water and green tomatoes in a blender; blend on the "Grate" setting. Measure out 7 cups into the pot. Stir in chicken soup base, salt, pepper, and garlic. Pour in Chardonnay wine.
  4. 4. Heat remaining 1/2 cup water and cream in a saucepan over a medium heat, about 5 minutes. Add instant mashed potatoes; cook, stirring constantly, until potatoes have a loose consistency.
  5. 5. Stir potatoes into the stockpot. Cover soup and simmer, stirring frequently, until flavors combine, about 45 minutes.
