Chicken Binakol (Filipino Chicken Soup)

Description
Filipino chicken soup cooked in earthy lemongrass with fresh coconut meat and juice.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound fresh ginger root, peeled and sliced
- 2 onions, sliced
- 5 stalks lemongrass, sliced
- 1 pound skinless, boneless chicken breasts, chopped
- 1 cup sliced coconut meat
- 1 ½ cups coconut water
- 1 ½ cups water
- salt and ground black pepper to taste
Directions
- 1. Heat oil in a pan over medium-high heat. Saute ginger, onion, and lemongrass in the hot oil until soft, 5 to 7 minutes. Add chicken and saute until tender and no longer pink in the centers, 5 to 7 minutes. Add coconut meat; cook for 3 minutes. Pour in coconut water and bring to a boil; boil for 2 minutes. Add water, salt, and pepper to taste. Serve.
