Insalata Caprese with Avocado

Description
I've had so many requests for this recipe that I finally decided to share it with everyone on Allrecipes.com. I never realized how many people truly enjoyed the small change-up on this popular salad.
Ingredients
- 2 avocados - peeled, pitted, and cubed
- 1 ½ tablespoons lemon juice
- 4 large tomatoes, cubed
- 1 pound fresh mozzarella cheese, cubed
- ⅓ cup basil leaves, thinly sliced
- 3 ½ tablespoons extra-virgin olive oil
- 1 pinch fine sea salt to taste
Directions
- 1. Combine avocados and lemon juice in a large bowl; toss to coat. Add tomato, mozzarella, and basil; toss again. Drizzle with olive oil and season with salt.
