Description

These date- and cashew-based cinnamon energy bites are super easy to make and are great on-the-go snacks or a paleo-friendly dessert.

Ingredients
  • 6 dates, pitted
  • 1 cup raw cashews
  • 1 tablespoon flax seed meal
  • ⅛ teaspoon ground cinnamon
  • 1 pinch salt
  • 1 tablespoon coconut oil
Directions
  1. 1. Combine dates, cashews, flax meal, cinnamon, and salt in a food processor or blender; blend until very well mixed. While the processor is running, add coconut oil and blend until mixture holds together.
  2. 2. Roll mixture into 20 balls (about the size of a large gum ball) and arrange on a plate or baking sheet. Freeze for at least 30 minutes. Keep energy balls stored in the freezer or refrigerator.
