German Oatmeal Date Cookies

Description
These delicious German Christmas cookies are quick and easy to make and are some of my favorite cookies of all time.
Ingredients
- 10 tablespoons unsalted butter, divided
- 3 cups rolled oats
- 2 eggs
- ½ cup white sugar
- 1 teaspoon vanilla sugar
- 1 teaspoon baking powder
- 1 ½ cups finely chopped, pitted dates
Directions
- 1. Melt 9 tablespoons butter in a small saucepan over low heat; mix in oats. Remove from heat and let cool, about 20 minutes.
- 2. Mix eggs, sugar, vanilla sugar, and baking powder together in a large bowl; stir in dates-oat mixture.
- 3. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with remaining 1 tablespoon butter.
- 4. Use 2 teaspoons to place little mounds of oat-date mixture 2 inches apart onto the baking sheets.
- 5. Bake in the preheated oven until lightly browned on the top and bottom, about 20 minutes.
