Martha Washington Pie

Description
This 'cake-pie' contains golden raisins and walnuts topped with a light icing.
Ingredients
- 1 cup butter, softened
- 2 cups white sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 cup milk
- 2 cups all-purpose flour
- ¾ cup golden raisins
- 1 cup chopped walnuts
- 2 (9 inch) unbaked pie crusts
- 1 cup confectioners' sugar
- ½ teaspoon vanilla extract
- 4 tablespoons milk
Directions
- 1. Preheat oven to 375 degrees F (190 degrees C).
- 2. To Make Filling: Mix butter, sugar, eggs, vanilla, cocoa and baking powder together until smooth; alternately mix in the milk and flour. Stir in raisins and walnuts.
- 3. Pour mixture into pastry shells and bake at 375 degrees F (190 degrees C) for 60 to 70 minutes. Do not underbake.
- 4. To Make Icing: Combine confectioners' sugar and vanilla. Gradually stir in milk until desired consistency is reached.
- 5. Spread icing on pie once its out of the oven and still warm.
