Mediterranean Three Bean Salad

Description
A refreshing blend of flavors great for summer or simple dinners! Flavors tend to blend better after time.
Ingredients
- 1 (15 ounce) can cannellini (white kidney) beans, rinsed and drained
- 1 (15 ounce) can garbanzo beans, rinsed and drained
- 1 (15 ounce) can dark red kidney beans, rinsed and drained
- ½ onion, minced
- 2 cloves garlic, minced
- 2 tablespoons minced fresh parsley, or to taste
- ¼ cup olive oil
- 1 lemon, juiced
- salt and ground black pepper to taste
Directions
- 1. Combine cannellini beans, garbanzo beans, kidney beans in a mixing bowl. Add onion, garlic, parsley, olive oil, lemon juice, salt, and black pepper; mix well.
