Description

An overloaded blend of super flavorful vegetables takes this green soup over the top!

Ingredients
  • 1 tablespoon olive oil
  • 1 (14.5 ounce) can green beans, drained
  • 1 (14.5 ounce) can sweet peas
  • 2 small potatoes, chopped
  • 2 tomatoes, chopped
  • 2 small zucchini, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup chopped broccoli
  • 1 cup chopped kale
  • 1 cup chopped spinach
  • 2 cloves garlic, chopped
  • 1 bay leaf
  • 6 cups water
  • 1 (8 ounce) can tomato sauce
Directions
  1. 1. Heat olive oil in a large pot over medium heat. Add green beans, peas, potatoes, tomatoes, zucchini, carrots, celery, broccoli, kale, spinach, garlic, and bay leaf. Pour water and tomato sauce over the vegetables. Bring soup to a boil. Reduce heat and simmer until vegetables are soft and flavors combine, about 2 hours.
