Mom's recipe for a mashed sweet potato casserole.
Ingredients
- 1 cup white sugar
- ⅓ cup butter
- 4 eggs, beaten
- 2 cups mashed sweet potatoes
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup milk
- ½ cup orange juice
Directions
- 1. Preheat the oven to 350 degrees F (175 degrees C).
- 2. Mix sugar and butter together in a bowl using an electric mixer. Add eggs and beat to combine. Mix in sweet potatoes. Beat in salt, cinnamon, and nutmeg. Pour in milk and orange juice; mix very carefully until combined. Pour into a casserole dish.
- 3. Bake in the preheated oven until firm, about 45 minutes.
