Description

Chocolate muffin loaded with protein, low in fat, yet high in flavor.

Ingredients
  • 2 packets CARNATION BREAKFAST ESSENTIALS® Rich Milk Chocolate High Protein Powder Drink Mix
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup applesauce
  • ½ cup plain low-fat Greek yogurt
  • ⅓ cup white sugar
  • 1 egg
  • ¾ teaspoon vanilla extract
  • ½ cup dark chocolate chips
Directions
  1. 1. Preheat the oven to 400 degrees F (200 degrees C). Line 9 muffin wells with cupcake liners or spray with nonstick spray.
  2. 2. Whisk powder drink mix, flour, baking soda, baking powder, and salt together in a medium bowl.
  3. 3. Whisk applesauce, yogurt, sugar, egg, and vanilla extract in a separate large bowl. Add the flour mixture; mix until just combined. Fold in chocolate chips.
  4. 4. Bake in the preheated oven for 7 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until muffins spring back when touched, an additional 10 to 12 minutes.
