Cauliflower "Mac" and Cheese

Description
It's mockaroni and cheese! Cauliflower stands in for pasta in this low-carb, gluten-free version.
Ingredients
- cooking spray
- 1 ½ cups chopped cauliflower
- 2 ⅝ ounces shredded 2% reduced-fat Cheddar cheese
- ½ cup low-fat (1%) cottage cheese
- ¼ teaspoon ground dry mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ⅛ teaspoon salt
Directions
- 1. Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with non-stick cooking spray.
- 2. Bring a pot of lightly salted water to a boil. Add cauliflower and boil until crisp-tender, about 5 minutes. Drain and place into the bottom of the prepared casserole dish.
- 3. Blend together Cheddar cheese, cottage cheese, ground mustard, garlic powder, onion powder, and salt in a bowl; beat with an electric blender until smooth.
- 4. Spoon blended mixture over cauliflower and stir until cauliflower is completely coated.
- 5. Bake in the preheated oven until golden and bubbly, about 35 minutes.
