Description

It's mockaroni and cheese! Cauliflower stands in for pasta in this low-carb, gluten-free version.

Ingredients
  • cooking spray
  • 1 ½ cups chopped cauliflower
  • 2 ⅝ ounces shredded 2% reduced-fat Cheddar cheese
  • ½ cup low-fat (1%) cottage cheese
  • ¼ teaspoon ground dry mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon salt
Directions
  1. 1. Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with non-stick cooking spray.
  2. 2. Bring a pot of lightly salted water to a boil. Add cauliflower and boil until crisp-tender, about 5 minutes. Drain and place into the bottom of the prepared casserole dish.
  3. 3. Blend together Cheddar cheese, cottage cheese, ground mustard, garlic powder, onion powder, and salt in a bowl; beat with an electric blender until smooth.
  4. 4. Spoon blended mixture over cauliflower and stir until cauliflower is completely coated.
  5. 5. Bake in the preheated oven until golden and bubbly, about 35 minutes.
