Description

A delicious and refreshing salad that is perfect for the summertime. It is ideal as a light lunch or side. A tangy salad with a kick!

Ingredients
  • ¼ cup rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 2 teaspoons wasabi paste
  • 1 teaspoon sesame oil
  • 1 head napa cabbage, shredded
  • 1 cucumber, peeled and sliced
  • 1 red bell pepper, cut into matchstick-size pieces
  • 1 large carrot, shredded
  • 3 tablespoons sesame seeds
  • 1 avocado, diced
Directions
  1. 1. Whisk rice vinegar, honey, ginger, soy sauce, wasabi paste, and sesame oil together in a bowl until vinaigrette is smooth.
  2. 2. Combine cabbage, cucumber, red bell pepper, and carrot in a large bowl. Pour vinaigrette over cabbage mixture and toss. Refrigerate for 1 hour.
  3. 3. Heat a skillet over medium heat; cook and stir sesame seeds until toasted, 3 to 5 minutes.
  4. 4. Garnish salad with toasted sesame seeds and avocado.
