Description

A delicious light salad, with a touch of that flavorful Japanese Miso Soup in the salad dressing. My favorite. You can substitute the shrimp with tofu, salmon, or tuna. Also, you can add mandarin oranges, strawberries, and pecans for added contrast.

Ingredients
  • ¼ cup rice wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 ½ teaspoons white sugar
  • salt and ground black pepper to taste
  • ½ cup canola oil
  • 1 teaspoon sesame oil
  • ½ cup chopped green onions (scallions)
  • 3 cups fresh spinach
  • 1 (16 ounce) package cooked shrimp
  • 1 tablespoon sesame seeds
Directions
  1. 1. Combine vinegar, honey, white miso paste, soy sauce, sugar, salt, and pepper in a blender; blend until smooth. Add canola oil and sesame oil; blend until dressing is emulsified and thick.
  2. 2. Pour dressing into a large bowl; stir in green onions. Add spinach and toss to coat.
  3. 3. Transfer spinach to a serving plate. Arrange shrimp on top. Sprinkle sesame seeds over shrimp.
