Description
A tasty, easy, Greek-inspired Avgolemono rice.
Ingredients
- 2 tablespoons salted butter
- 2 tablespoons extra-virgin olive oil
- 1 cup medium-grain white rice
- 2 cups water
- ¼ cup lemon juice
- ½ cup grated Parmesan cheese
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 large egg, whisked
Directions
- 1. Combine butter and olive oil in a saucepan over medium heat. Add rice and stir to coat. Cook and stir for 1 minute.
- 2. Stir in water, cover, and cook for 10 minutes. Stir in lemon juice; cover and cook until rice is tender and liquid has been absorbed, about 5 minutes longer.
- 3. Remove from the heat and let sit, covered, for at least 5 minutes.
- 4. Stir in Parmesan cheese, parsley, and oregano. Add whisked egg and stir until well combined, being careful not to scramble.
