Delectable Organic Gluten-Free Waffles

Description
During a wheat- and sugar-free time in my life, I created a recipe for some absolutely delicious waffles. They are easy to make and a breakfast the whole family could enjoy together.
Ingredients
- 1 cup rice flour
- 1 tablespoon baking powder (such as Rumford®)
- 1 pinch salt
- 1 cup milk
- 2 eggs
- 1 tablespoon light olive oil
- 1 teaspoon vanilla extract
Directions
- 1. Preheat a waffle iron according to manufacturer's instructions.
- 2. Mix rice flour, baking powder, and salt together in a bowl.
- 3. Whisk milk, eggs, olive oil, and vanilla extract together in a separate bowl; add to rice flour mixture and whisk until no lumps remain. Let sit for 1 to 2 minutes.
- 4. Pour batter into waffle iron, working in batches, and cook according to manufacturer's instructions.
