Description

Ideal for college dorm rooms, this recipe will satisfy a serious Italian food craving and takes just minutes to prepare using only a microwave. Can also be cooked on the stovetop. Add a variety of extra veggies for a healthier, more filling meal. Top with cheese and serve with crusty garlic bread, grilled chicken, or a fresh salad. And of course a big glass of wine!

Ingredients
  • 1 (3 ounce) package ramen noodles, without flavor packet
  • 1 cup fresh baby spinach
  • water to cover
  • ¼ cup pasta sauce
  • 1 tablespoon sun-dried tomatoes packed in oil, drained and chopped
  • 1 tablespoon extra-virgin olive oil, or to taste
  • 2 tablespoons grated Parmesan cheese
Directions
  1. 1. Break block of ramen into 4 equal pieces. Place in a medium microwave-safe bowl and top with spinach. Fill bowl with water until noodles are covered. Microwave on high until noodles are cooked and spinach is wilted, 3 1/2 minutes.
  2. 2. Pour out excess water. Add pasta sauce, sun-dried tomatoes, and olive oil; mix until noodles are coated. Microwave again until sauce is warm, about 30 seconds. Top with Parmesan cheese.
