No Nut Baked Granola

Description
My husband is allergic to nuts, so I developed a granola recipe that's easy and nut-free. Store in an airtight container in the fridge.
Ingredients
- 4 cups rolled oats
- ⅔ cup honey
- ½ cup wheat germ
- 2 teaspoons unsweetened cocoa powder
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup unsweetened flaked coconut
- ½ cup chopped dried fruit
Directions
- 1. Preheat oven to 275 degrees F (135 degrees C).
- 2. Combine oats, honey, wheat germ, cocoa powder, cinnamon, and vanilla extract in a large bowl. Spread oat mixture on a large rimmed baking sheet.
- 3. Bake in the preheated oven, turning once, until lightly toasted, about 20 minutes. Stir in coconut and dried fruit.
- 4. Continue baking until coconut is lightly toasted, about 10 minutes. Cool completely before transferring to an airtight container, about 15 minutes.
