Description

Delicious, gourmet homemade vegan pizza on toast that's quick and easy!

Ingredients
  • 1 thick slice whole grain bread
  • 1 cup shredded vegan cheese
  • ½ medium portobello mushroom, sliced
  • ¼ cup chopped red onion
Directions
  1. 1. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler on low. Cover a baking sheet with aluminum foil.
  2. 2. Lightly toast bread in a toaster or toaster oven, 1 to 2 minutes. Place toast on the prepared baking sheet and layer with 1/2 of the vegan cheese, all of the cheese and mushroom slices, and the remainder of cheese.
  3. 3. Broil in the preheated oven until cheese begins to brown, 5 to 7 minutes. Remove from the oven and allow to sit while the mushrooms continue to cook, 2 to 3 minutes more.
