Description

This is a twist on an Italian caprese recipe.

Ingredients
  • 10 pounds roma tomatoes, sliced, or to taste
  • 4 red onions, sliced
  • 2 tablespoons salt
  • 2 tablespoons freshly ground black pepper
  • 2 cups olive oil
  • 1 ½ cups lemon juice
  • 1 ½ bunches fresh cilantro, chopped
Directions
  1. 1. Arrange tomatoes and onions on a large platter. Season with salt and black pepper.
  2. 2. Whisk olive oil and lemon juice together in a medium bowl; pour over salad and toss to coat. Sprinkle with cilantro.
