Description

Chewy, buttery, gooey, chocolate chip cookie meets Kentucky pecan pie with a touch of coconut. Serve warm with ice cream or whipped cream.

Ingredients
  • 2 large eggs
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ cup corn syrup (such as Karo®)
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup pecans, chopped
  • ½ cup shredded unsweetened coconut (such as Bob's Red Mill®)
  • 1 (9 inch) unbaked pie shell
Directions
  1. 1. Preheat the oven to 350 degrees F (175 degrees C).
  2. 2. Beat eggs together in a bowl; beat in white sugar and brown sugar. Mix in corn syrup, butter, vanilla extract, and salt. Fold in chocolate chips, chopped pecans, and coconut. Pour into the prepared pie shell.
  3. 3. Bake in the preheated oven until golden and bubbly, 45 to 50 minutes. Be sure to watch the rim of the pie for overbrowning, covering with foil after 30 minutes if needed. Remove from the oven and let cool for at least 4 hours.
