Description

This quick, cool summer or fall salad is very filling and suitable for a light-meal main dish.

Ingredients
  • 1 (8 ounce) package elbow macaroni
  • ½ (15 ounce) can black beans, rinsed and drained
  • 1 (5 ounce) can tuna, drained and flaked
  • ½ cup mayonnaise
  • 3 green onions, sliced
  • 2 tablespoons bacon bits
  • ½ lemon, juiced
  • ground black pepper to taste
Directions
  1. 1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until cooled completely; drain and transfer to a large bowl.
  2. 2. Mix black beans, tuna, mayonnaise, green onions, bacon bits, lemon juice, and black pepper with the macaroni. Cover the bowl with plastic wrap and refrigerate until chilled.
