
Black Bean Tuna Salad

Description
This quick, cool summer or fall salad is very filling and suitable for a light-meal main dish.
Ingredients
- 1 (8 ounce) package elbow macaroni
- ½ (15 ounce) can black beans, rinsed and drained
- 1 (5 ounce) can tuna, drained and flaked
- ½ cup mayonnaise
- 3 green onions, sliced
- 2 tablespoons bacon bits
- ½ lemon, juiced
- ground black pepper to taste
Directions
- 1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until cooled completely; drain and transfer to a large bowl.
- 2. Mix black beans, tuna, mayonnaise, green onions, bacon bits, lemon juice, and black pepper with the macaroni. Cover the bowl with plastic wrap and refrigerate until chilled.
