
Snowy Pecan Cookies

Description
You will need to refrigerate the dough for these cookies overnight.
Ingredients
- 4 (1 ounce) squares unsweetened chocolate
- ½ cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 cups white sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup chopped pecans
- ⅓ cup confectioners' sugar for decoration
Directions
- 1. Melt chocolate squares and cooking oil in a saucepan.
- 2. Let cool and pour into mixing bowl. Add sugar, eggs and vanilla, mixing until well blended.
- 3. Sift dry ingredients together and gradually add to chocolate/egg mixture, stirring well.
- 4. Stir in nuts, cover and place in refrigerator overnight.
- 5. Preheat oven to 375 degrees and grease cookie sheets.
- 6. Shape dough into small balls, about an inch in diameter. Roll in powdered sugar and place about 2 inches apart on cookie sheet .
- 7. Bake for 8 minutes.
