Description

After experimenting with many different recipes, I came up with this unique recipe for apple crisp. It has some ingredients you wouldn't expect to find in a crisp recipe, making this apple crisp especially delicious.

Ingredients
  • ½ cup all-purpose flour
  • ⅓ cup rolled oats
  • ⅓ cup shredded coconut
  • ¼ cup white sugar
  • ¼ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 6 tablespoons unsalted butter, cut into 1/4-inch pieces and frozen
  • ⅓ cup chopped walnuts
  • 5 cups apples - peeled, cored and sliced
  • ¼ cup white sugar
  • ¼ cup light brown sugar
  • 2 tablespoons instant tapioca
  • 1 tablespoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
Directions
  1. 1. Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie dish with cooking spray.
  2. 2. Place the flour, rolled oats, coconut, 1/4 cup of white sugar, 1/4 cup of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, baking powder, baking soda, salt, and butter into the work bowl of a food processor. Pulse several times to make a mixture that looks like coarse crumbs. Stir in the walnuts.
  3. 3. In a large bowl, mix together the apples, 1/4 cup of white sugar, 1/4 cup of brown sugar, tapioca, vanilla extract, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg until well combined. Pour the filling into the prepared pie dish; spread the topping evenly over the filling.
  4. 4. Bake in the preheated oven until the apple crisp is bubbling and golden brown, 30 to 40 minutes.
