Description
Chocolate chip cookies made with ground zucchini and a hint of cinnamon.
Ingredients
- ¾ cup butter, softened
- 1 ½ cups white sugar
- 1 egg
- 1 ½ teaspoons vanilla extract
- 1 ½ cups finely chopped zucchini
- 3 ¼ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ cup chopped walnuts
- ¾ cup miniature semisweet chocolate chips
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- 2. In a large bowl, cream together the butter, sugar. Beat in egg and vanilla. Stir in the zucchini. Combine the flour, baking powder, salt and cinnamon; stir into the zucchini mixture. Mix in the chocolate chips and walnuts. Drop by heaping spoonfuls onto the prepared cookie sheets.
- 3. Bake for 12 to 15 minutes in the preheated oven, until edges are light brown. Remove from baking sheets to cool on wire racks.
