
Sunshine Pineapple Cookies

Description
Yummmmmmy to the palate! (otherwise known as NOT ENOUGH COOKIES MOM!!)
Ingredients
- 1 cup butter
- 1 ½ cups white sugar
- 1 egg
- 2 tablespoons vanilla extract
- 1 (20 ounce) can crushed pineapple, with juice
- ½ cup chopped pecans
- 3 ½ cups all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking soda
Directions
- 1. Cream together butter or margarine, sugar, egg, and vanilla.
- 2. Add crushed pineapple with juice and chopped pecans. Sift together flour with salt, nutmeg and baking soda.
- 3. Drop by tablespoonfuls (if there is any left at this point) onto greased cookie sheet 2 1/2 inches apart. Bake at 350 degrees F (175 degrees C) 10-15 minutes or until lightly golden brown. Cool.
