
Hominy with Cheese

Description
Quick, easy, and inexpensive side dish that can be served with anything. To limit clean-up, use a pan that can go from stove-top to oven.
Ingredients
- 2 (15 ounce) cans hominy
- 1 cup milk
- 1 cup shredded sharp Cheddar cheese, divided
- ½ cup chopped tomato
- 1 green bell pepper, diced
- ½ cup water
- ¼ cup butter
- 1 jalapeno pepper, diced
- 1 teaspoon salt
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C).
- 2. Combine hominy, milk, 1/2 cup Cheddar cheese, tomato, green bell pepper, water, butter, jalapeno pepper, and salt in a heavy skillet. Cook over low heat, stirring occasionally, until cheese and butter have melted, about 5 minutes.
- 3. Transfer hominy mixture to an 8-inch baking dish; sprinkle remaining cheese evenly on top.
- 4. Bake in the preheated oven until top starts to brown, about 30 minutes.
