Description

Looking for something to do with leftover corned beef? This crispy corned beef hash is made from start to finish in the air fryer.

Ingredients
  • 1 pound red potatoes, cubed
  • ½ cup chopped green bell pepper
  • ½ cup chopped onion
  • 2 teaspoons vegetable oil
  • ½ teaspoon paprika
  • salt and ground black pepper to taste
  • 1 cup cubed leftover corned beef
  • 2 eggs
Directions
  1. 1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. 2. Combine potatoes, bell pepper, and onion in a large bowl. Add vegetable oil, paprika, salt, and pepper. Stir until potatoes are evenly coated. Transfer mixture to the basket of the air fryer.
  3. 3. Cook for 10 minutes. Shake and cook 5 for minutes more. Stir in the corned beef and cook for 5 minutes.
  4. 4. Make 2 small wells in the mixture. Crack 1 egg into each well. Cook until eggs are set and cooked to desired doneness, about 3 minutes.
