Description

Quinoa mixed with Asian flavors of sweet and salty. Be careful not to burn the garlic! And feel free to add chopped peanuts as a garnish.

Ingredients
  • 1 ½ tablespoons coconut oil
  • ½ onion, chopped
  • 2 green onions, chopped
  • 3 cloves garlic, chopped
  • 1 cup cooked quinoa
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons orange marmalade
  • 1 tablespoon soy sauce, or to taste
  • 1 pinch garlic salt
  • 1 egg, beaten
Directions
  1. 1. Melt coconut oil in a skillet over medium-high heat; add onion. Cook and stir until soft, about 3 minutes. Add green onions and garlic to skillet. Cook and stir until garlic is slightly crispy, about 2 minutes.
  2. 2. Reduce heat to medium; add cooked quinoa, cilantro, marmalade, soy sauce, and garlic salt to the skillet. cook and stir until heated through, about 2 minutes. Make a well in quinoa-veggie mixture; add egg and cook and stir until egg is firm, about 3 minutes. Stir cooked egg into quinoa-veggie mixture.
