Cold Vegan Soba Noodles with Peanut Sauce

Description
This Asian cold soba noodle recipe is popular in many Chinese restaurants.
Ingredients
- 1 (8.8 ounce) package soba noodles
- ¼ cup smooth peanut butter
- ¼ cup water
- 2 tablespoons soy sauce
- 2 limes, juiced
- ¼ teaspoon sriracha hot pepper sauce
- 2 carrots, shredded
- 1 stalk celery, chopped
- 2 green onions, chopped
- 1 cucumber, julienned
- toasted sesame seeds, for garnish
Directions
- 1. Bring water to a boil in a large pot. Add soba noodles; cook, stirring occasionally until tender, about 5 minutes. Drain and rinse with cold water. Set aside or refrigerate until ready to eat.
- 2. Whisk together peanut butter, water, soy sauce, lime juice, and sriracha sauce until smooth.
- 3. Toss cooked soba noodles, carrots, celery, and green onions together in the peanut butter sauce. Garnish with cucumber and toasted sesame seeds. Serve cold.
