Description

This Asian cold soba noodle recipe is popular in many Chinese restaurants.

Ingredients
  • 1 (8.8 ounce) package soba noodles
  • ¼ cup smooth peanut butter
  • ¼ cup water
  • 2 tablespoons soy sauce
  • 2 limes, juiced
  • ¼ teaspoon sriracha hot pepper sauce
  • 2 carrots, shredded
  • 1 stalk celery, chopped
  • 2 green onions, chopped
  • 1 cucumber, julienned
  • toasted sesame seeds, for garnish
Directions
  1. 1. Bring water to a boil in a large pot. Add soba noodles; cook, stirring occasionally until tender, about 5 minutes. Drain and rinse with cold water. Set aside or refrigerate until ready to eat.
  2. 2. Whisk together peanut butter, water, soy sauce, lime juice, and sriracha sauce until smooth.
  3. 3. Toss cooked soba noodles, carrots, celery, and green onions together in the peanut butter sauce. Garnish with cucumber and toasted sesame seeds. Serve cold.
