Amazing Chickpea Cinnamon Pancakes

Description
Gluten-free, sugar-free, low-cholesterol, light and fluffy low-fat pancakes that taste great! Perfect for South Beach Diet® Phase One.
Ingredients
- 1 cup chickpea (garbanzo bean) flour
- 1 tablespoon ground cinnamon
- 2 teaspoons baking powder
- 4 (1 gram) packets stevia powder
- ¼ teaspoon salt
- 1 cup nonfat milk
- ¼ cup beaten egg whites
- 2 tablespoons vegetable oil
Directions
- 1. Mix chickpea flour, cinnamon, baking powder, stevia powder, and salt together in a bowl.
- 2. Whisk milk, egg whites, and vegetable oil together in a separate bowl. Pour over the chickpea flour mixture; whisk until batter is just combined.
- 3. Heat a lightly oiled griddle over medium-high heat. Pour 1/2 cup portions onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
