Description

These delicately spiced muffins are lightly sweetened with honey.

Ingredients
  • 2 cups whole wheat flour
  • ½ cup all-purpose flour
  • ⅛ teaspoon salt
  • 2 teaspoons baking powder
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup vegetable oil
  • 2 tablespoons applesauce
  • ½ cup honey
  • 1 ½ cups shredded carrots
  • ⅔ cup raisins
Directions
  1. 1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. 2. Stir together whole wheat flour, all-purpose flour, salt, baking powder, nutmeg, cloves and cinnamon. In a separate bowl, stir together eggs, buttermilk, oil, applesauce and honey. Stir egg mixture into flour just until combined. Fold in carrots and raisins. Spoon batter into prepared muffin cups.
  3. 3. Bake in preheat oven for 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
