Description

Easy Asian watercress soup with dates, goji, and lots of ginger--a nourishing winter remedial soup!

Ingredients
  • 8 cups water
  • 6 dried red dates, rinsed
  • 1 tablespoon goji berries, rinsed
  • 1 tablespoon vegetable oil
  • 2 carrots, sliced
  • 4 slices fresh ginger
  • 1 teaspoon salt
  • ½ teaspoon vegetable stock powder
  • ½ teaspoon sesame oil
  • ground black pepper to taste
  • 1 bunch watercress
Directions
  1. 1. Bring water to a boil in a large pot; stir in red dates and goji berries.
  2. 2. Heat oil in a skillet over medium heat. Cook and stir carrots, ginger, and salt for 1 minute. Transfer to the pot of water. Stir in vegetable stock powder, sesame oil, and black pepper. Reduce heat to medium-low and add watercress; simmer until wilted, about 15 minutes.
