Description
Easy Asian watercress soup with dates, goji, and lots of ginger--a nourishing winter remedial soup!
Ingredients
- 8 cups water
- 6 dried red dates, rinsed
- 1 tablespoon goji berries, rinsed
- 1 tablespoon vegetable oil
- 2 carrots, sliced
- 4 slices fresh ginger
- 1 teaspoon salt
- ½ teaspoon vegetable stock powder
- ½ teaspoon sesame oil
- ground black pepper to taste
- 1 bunch watercress
Directions
- 1. Bring water to a boil in a large pot; stir in red dates and goji berries.
- 2. Heat oil in a skillet over medium heat. Cook and stir carrots, ginger, and salt for 1 minute. Transfer to the pot of water. Stir in vegetable stock powder, sesame oil, and black pepper. Reduce heat to medium-low and add watercress; simmer until wilted, about 15 minutes.
