Description

Beautiful composed salty and sweet salad with a bite!

Ingredients
  • ¼ cup canola oil
  • ¼ cup cider vinegar
  • salt and ground black pepper to taste
  • 1 seedless watermelon, cubed
  • 3 shallots, chopped
  • ⅓ cup chopped cilantro
  • 1 bunch arugula
  • 2 (8 ounce) packages shredded pepper Jack cheese
Directions
  1. 1. Pour canola oil in a thin stream into vinegar; whisk until blended. Season dressing with salt and pepper.
  2. 2. Toss watermelon, shallots, cilantro, and dressing together in a large bowl. Arrange arugula on plates and spoon salad on; top with pepper Jack cheese.
