Description
Beautiful composed salty and sweet salad with a bite!
Ingredients
- ¼ cup canola oil
- ¼ cup cider vinegar
- salt and ground black pepper to taste
- 1 seedless watermelon, cubed
- 3 shallots, chopped
- ⅓ cup chopped cilantro
- 1 bunch arugula
- 2 (8 ounce) packages shredded pepper Jack cheese
Directions
- 1. Pour canola oil in a thin stream into vinegar; whisk until blended. Season dressing with salt and pepper.
- 2. Toss watermelon, shallots, cilantro, and dressing together in a large bowl. Arrange arugula on plates and spoon salad on; top with pepper Jack cheese.
