Description

The ultimate in comfort food, with a tangy twist. The feta and garlic give these creamy mashed potatoes a uniquely delicious flavor. Garnish with parsley and additional feta.

Ingredients
  • 6 large Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
  • 1 (6 ounce) package crumbled feta cheese
  • ½ cup milk
  • 2 cloves garlic, minced
  • 2 tablespoons salted butter
  • salt to taste
Directions
  1. 1. Place potatoes in a saucepan and cover with water. Bring to a boil and cook until tender, about 20 minutes. Remove from heat and drain well.
  2. 2. Mash with a potato masher until chunks are gone. Add feta cheese, milk, garlic, butter, and salt. Mix well.
