Description

Fresh, easy, cool rice bowl ideal for quick summer meals. I improvised this when I was sick because it is very easy on the tummy! Could probably be improved with some fresh herbs.

Ingredients
  • 1 ¾ cups water
  • 1 cup uncooked basmati rice, rinsed
  • 2 cups cottage cheese
  • 2 medium avocados, cut into bite-sized pieces
  • 1 cup deli turkey meat, torn into bite-sized pieces
  • 4 teaspoons lemon juice
  • 4 teaspoons soy sauce, or to taste
  • 8 multigrain crackers
  • salt and ground black pepper to taste
Directions
  1. 1. Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 18 minutes. Remove saucepan from the heat and let sit, covered, at least 10 minutes.
  2. 2. Arrange 1/2 cup cooked rice, 1/2 cup cottage cheese, 1/2 an avocado, and 1/4 cup turkey side-by-side in an individual bowl. Repeat with remaining ingredients to create 4 bowls. Drizzle lemon juice and soy sauce over each bowl and garnish with 2 crackers. Season with salt and pepper.
