Refreshing Oatmeal Drink (Agua de Avena)

Description
This is a refreshing drink from Mexico that is very similar to horchata but healthier and easier to make! Serve cold.
Ingredients
- 8 cups water, divided
- 1 cup quick-cooking oats
- 1 cinnamon stick
- ½ cup white sugar
- 2 teaspoons vanilla extract
Directions
- 1. Combine 5 cups water, quick-cooking oats, and cinnamon stick in a blender; blend until combined, about 1 minute.
- 2. Pour the oat mixture through a strainer, collecting the liquids in a pitcher and reserving the solids. Pour remaining water through the strainer containing the solids and into the pitcher. Add sugar and vanilla extract; refrigerate until chilled, about 1 hour.
