Description
Grandmother's recipe. Cornmeal with tomatoes, ground beef, corn, and tomatoes.
Ingredients
- cooking spray
- 1 pound lean ground beef
- 1 cup chopped onion
- 2 teaspoons crushed garlic
- 1 (14.5 ounce) can corn
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon chili powder, or more to taste
- 1 teaspoon salt
- 1 cup cornmeal
- 3 cups tomato juice
- 1 (6 ounce) can small pitted black olives
- 1 cup shredded Cheddar cheese
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
- 2. Cook and stir beef, onion, and garlic in a skillet over medium heat until beef is browned, about 5 minutes. Stir in corn, tomatoes, chili powder, and salt; simmer until flavors combine, about 20 minutes. Stir in cornmeal. Add tomato juice and olives.
- 3. Pour beef mixture into the prepared baking dish.
- 4. Bake in the preheated oven until hot and bubbly, about 30 minutes. Sprinkle Cheddar cheese on top. Continue baking until cheese is melted, about 5 minutes.
